Soup Recipes from the Cookbook

Watermelon Gazpacho

Ingredients:

12 oz. Fresh seedless watermelon, peeled and cut into small cubes.
1 Small mango, pitted, and diced small
4 oz. Fresh honeydew, peeled
and cut into small cubes.
1 Fresh jalapeno, seeded and chopped.
1 Fresh lime, juiced
1/2 tsp. Kosher salt
2 tsp. Cilantro leaves, chopped.

Preparation:

In a food processor, combine all the ingredients except the cilantro. Cover and process until smooth.
Add cilantro and pulse to incorporate. Cover and refrigerate.
Serve in a chilled bowl and garnish with a spoonful of plain yogurt if desired.
